Ingredients
½lbchicken breast,cooked
1¾cupschicken stock
1cantomatoes,diced
1canblack beans
1red potato
1large carrot
2garlic clove
2tspchili powder
½tspcumin seeds
salt and pepper,to taste
¼cupfresh parsley,chopped, for garnish
Preparation
Combine the chicken, stock, tomatoes, beans, potato, carrot, garlic, chili powder, and cumin seeds in a 6-quart pot.
Cover and bring to a boil. Reduce the heat and simmer for 15 to 20 minutes until the potato and carrot are tender. Taste and season with salt and pepper, if needed.
Serve warm, and enjoy!
