Ingredients
3tbspoil
3cupschicken
1tspsalt
1tsppepper
1⅓cupsonion,chopped
¾cupcarrot,chopped
1cuppotato,chopped
4¼cupswater
⅔cuppeas
⅔cupcurry paste
Preparation
Heat up 2 tablespoons of oil on low to medium heat.
Sear the chicken until the outside turns golden brown.
Season with salt and pepper.
Take out the chicken, make sure not to clean the pot or some flavor will be wiped away.
Add another 1 tablespoon of oil, fry the onions, carrots, and potatoes until soft.
Add the chicken back in with the water.
Bring to a boil then simmer for 10 minutes with the lid on.
Add in the peas and curry paste, stir well.
Serve with rice.
