Ingredients

18⅕ozbrownie mix,(1 box)

⅓cupvegetable oil

¼cupwater

1egg

4ozcream cheese,room temperature

¼cupbutter,room temperature

1tspvanilla

¼cupunsweetened cocoa powder

2cupspowdered sugar

24medium strawberries,(with stem)

1cupsemisweet chocolate chips,melted

Preparation

Rinse berries and pat dry with paper towels. On a baking sheet or flat surface, lay out a sheet of waxed paper.

In a medium bowl, melt the chocolate chips at medium heat in microwave in 30 second increments. Stir, and repeat until chocolate is melted and smooth.

Dip ¾ of the berry into the chocolate, and lay gently on the waxed paper. Let chocolate set and harden at room temperature or in the refrigerator.

Preheat oven to 350 degrees F. In a mixing bowl combine the brownie mix, oil, water and egg and stir until completely combined.

Line a mini muffin tin with mini liners, and divide the batter into the cups.

Bake at 350 degrees F for 19 to 21 minutes. Let brownies cool.

With a hand or stand mixer, beat butter and cream cheese. Add the vanilla. Scrape down sides of bowl, and gradually add the sugar and cocoa powder, stopping to scrape down sides of bowl. Frosting will be thick.

Using a piping bag and tip, frost the brownies with a generous amount of frosting, and then top with a cooled chocolate covered strawberry. Enjoy!
