Ingredients

2cupssugar

1¾cupsflour

1cupunsweetened cocoa powder

1½tspbaking powder

1½tspbaking soda

1tspsalt

2eggs,large

1cupmilk

½cupvegetable oil

1tbspvanilla extract

1cuphot coffee,you can substitute boiling water

20oreos,crumbled in large chunks and divided

Preparation

Preheat the oven to 350 degrees F and line two 12 cup muffin tins with cupcake liners.

In a stand mixer on low speed mix together the sugar, flour, cocoa powder, baking powder, baking soda and salt.

In a small bowl whisk together the eggs, milk, oil, vanilla, and half of the crumbled Oreos. Add it to the stand mixer on low then medium speed until just combined and finally add in the water carefully and stir it in by hand until just combined.

Divide the batter into lined muffin tins, filling cupcake liners 2/3 way full.

Evenly sprinkle the other half of the crumbled Oreos over each muffin.

Bake one muffin tin at a time for 15 to 20 minutes then remove, let cool completely.
