Ingredients
10ozchopped romaine lettuce,(about 2 medium or 3 small heads), chopped
2cupscherry tomatoes,quartered
8ozcucumber,(1 medium), seeded and chopped
1bell pepper,yellow or orange
1cupred onion,(½ medium), chopped
½cupfresh parsley,chopped
½cupkalamata olives,pitted and halved
6ozfeta cheese,(about 1¼ cups) sliced into ¼-inch cubes
½cupextra-virgin olive oil
¼cupred wine vinegar
2clovesmedium garlic,pressed or minced
2tspdried oregano
1tsphoney,or maple syrup
½tspsalt,more to taste
pinchred pepper flakes,for heat, optional
Preparation
In a large serving bowl, combine the chopped lettuce, tomatoes, cucumber, pepper, onion, parsley, olives and feta. Toss the ingredients together and set aside.
To prepare the vinaigrette, combine all of the ingredients in a liquid measuring cup or to a dressing mixer.
Whisk until blended. Taste, and add more vinegar for more tangy dressing, or more honey for a more tame dressing.
Drizzle enough dressing to the salad.
Serve and enjoy.
