Ingredients
1¼lbsromaine lettuce
¼lbpepperoni,sliced
4ozpimientos,(1 jar), drained, sliced
1cupred onion,chopped
1½cupolives,or artichoke hearts, drained
3tbspwine vinegar,red or white
¼cupolive oil
½tspsalt
¼tspfresh ground black pepper
½cupparmesan,grated
Preparation
In a large glass or stainless-steel bowl, combine the romaine, pepperoni, pimientos, onion and the artichoke hearts or olives. Toss to combine.
Add the vinegar, oil, salt, pepper and Parmesan to the bowl. Toss thoroughly to combine the ingredients.
