Ingredients

3cupsromaine lettuce,coarsely chopped

1cupchicken breast,cooked, chopped

½cupmozzarella,fresh, cut into ½-inch pieces

½cuptomato,chopped

¾cupcucumber,chopped

1cupchickpeas,drained, rinsed

½cupbacon,cooked, crumbled

1avocado,peeled, pitted and diced

¼cupchives,thinly sliced

2tbsplemon juice

2tbspdijon mustard

3tbspred wine vinegar

3tspgranulated sugar

2tbspshallot,finely minced

½tspdried oregano

1tspdried parsley

⅓cupolive oil

Preparation

Place the lettuce, chicken, mozzarella, tomato, cucumber, chickpeas, bacon, avocado, and chives in a large bowl.

In a small bowl, whisk together the lemon juice, Dijon mustard, red wine vinegar, granulated sugar, shallot, oregano, parsley and olive oil.

Pour the dressing over the salad, then toss to coat.
