2lbschicken thighsboneless or breasts
1limefor serving
2tbsplime juicefresh
¼cupcilantrofresh, minced plus extra for garnish
1½tbsphoney
2garlic clovesminced
1tspcumin
1tspchili powder
1tbspolive oil
¾tspkosher salt
½tspblack pepper
Preparation
Combine the lime juice, cilantro, honey, garlic, cumin, chili powder, olive oil, salt, and black pepper in a small bowl.
Pour the marinade over the chicken.
Marinate for 30 minutes or up to 2 hours.
Preheat the grill to medium high heat.
Cook the chicken on an oiled grate for 7 to 8 minutes.
Turn over and cook for an additional 7 to 8 minutes or until the chicken reaches 165 degrees F.
Preheat the oven to 400 degrees F.
Place the chicken on a baking sheet and bake 20 to 25 minutes or until the chicken reaches 165 degrees F.
Let rest for 5 minutes.
Serve with lime slices and additional chopped cilantro, and enjoy!
