Ingredients
4 cups water, for boiling
6 sweet potatoes, peeled and cubed
1/2 cup orange juice
1/4 cup heavy cream
1 tsp orange zest
1/2 tsp ground nutmeg
1/8 tsp salt
Preparation
In a large pot, bring water to a boil and add sweet potatoes.
Cook for 15-20 minutes, or until fork-tender.
Drain sweet potatoes and return to the same empty pot. Using a hand-held mixer, add the rest of the ingredients and mix until fluffy.
Reheat if necessary and serve immediately.
