Ingredients
1½cupsflour
½tspsalt
½tspbaking soda
½tspbaking powder
1tspground cinnamon
2eggs,large
½cupvegetable oil
1cupsugar
2tspvanilla extract
1½cupszucchini,grated
Preparation
Preheat oven to 325 degrees F. Spray the 9 by 5 loaf pan with baking spray or butter and flour it well.
Sift flour, salt, baking soda, baking powder and cinnamon together.
Whisk together the eggs, oil, vanilla and sugar, then add in the dry ingredients.
Add in the zucchini and mix well.
Bake for 45 to 50 minutes, until it springs back when touched then let cool for 15 minutes before removing from loaf pan.
