Ingredients
4lbsbeef chuck roast
1tspkosher salt
½tspcoarse ground black pepper
3carrots,cut into 2-inch chunks
2stalkscelery,chopped
2russet potatoes,peeled and cut into 2-inch chunks
1ozdry onion soup mix,(1 packet)
10.75ozcondensed cream of mushroom soup
12ozCoca-Cola soda
Preparation
Preheat your oven to 325 degrees F.
Season the chuck roast with kosher salt and pepper.
Add oil to a large pot on high heat and sear the beef for about 4 to 5 minutes on each side.
Add the carrots, celery, and potatoes around the pot roast.
In a medium bowl whisk together onion soup mix, cream of mushroom soup, and soda, then pour it over the chuck roast.
Cover and cook for 3 to 3½ hours until tender.
