Ingredients
¾lbpork sausage
5corn tortillas,(6-inch)
1cupmonterey jack cheese,shredded
1cupcheddar cheese,shredded
¼cupgreen chiles,canned, chopped
6eggs,beaten
½cupheavy whipping cream
½cupricotta cheese
½tspchili powder
¼cupfresh cilantro,minced
Preparation
Preheat the oven to 350 degrees F. Grease a 9-inch pie plate.
Heat a large skillet over medium-high heat and stir in sausage. Cook and stir for about 10 minutes until sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
Place the four tortillas in prepared pie plate, overlapping and extending ½-inch beyond rim, then place the remaining tortilla in the center.
Layer the sausage, Monterey Jack cheese, Cheddar cheese, and green chilies over tortillas.
Combine the eggs, heavy whipping cream, ricotta cheese, and chili powder in a bowl, then slowly pour in the egg mixture into the pie plate.
Bake in the oven for about 45 minutes until center is set and puffed.
Sprinkle with cilantro and cut into wedges, then serve and enjoy!
