Ingredients

1 ½lbsasparagustrimmed and washed

1tbspbutter

1smalloniondiced

1garlic cloveminced

2 ¼cupschicken brothnot low sodium

salt & black pepperto taste

½tsplemon juicefresh

½cupheavy creamor to taste

parmesan cheesefor serving, optional

Preparation

Cut asparagus into ½-inch pieces.

Cook onion and garlic in butter over medium heat until tender.

Add asparagus and cook for an additional 5 minutes.

Stir in broth, salt, and pepper. Cover and let simmer for 10 to 15 minutes or until asparagus is softened.

Using a hand blender, puree soup until smooth. Stir in cream and lemon juice.

Taste and season with salt and pepper if needed.
