Ingredients
3tbspunsalted butter
1lbshrimp,peeled
3garlic cloves,finely chopped or minced
½cupdry white wine,or chicken stock/broth
¾cupheavy cream
¼cupparmesan cheese,freshly grated
Preparation
Melt the butter in a skillet over high heat.
When it starts foaming, add the prawns. Cook until they start to change from translucent to white.
Add the garlic, then stir for 20 seconds. By now the prawns should be white, but still raw inside.
Add the wine, then allow to steam and bubble rapidly. Cook for 30 seconds or until the smell of alcohol ceases and has half evaporated.
Add the cream, parmesan, salt, and pepper. Simmer for 1 minute or until it thickens slightly.
Adjust salt and pepper to taste.
Serve garnished with fresh parsley and lemon wedges on the side, and enjoy!
