Ingredients
2 tbsp. olive oil, extra-virgin
1 tbsp. unsalted butter
1 large white onion, finely chopped
1 large clove garlic, smashed and peeled
2 tbsp. all-purpose flour
3 cups chicken broth, lower-salt
1/2 tbsp. sugar
1 sprig fresh thyme
Kosher salt
black pepper, freshly ground
3 tbsp. fresh chives, thinly sliced
Preparation
In a Dutch oven, heat up the oil and butter over medium heat.
Stir in the garlic and onion.
Add in flour and stir.
Combine in the broth, tomatoes, sugar, and thyme.
Bring to a simmer and cook for 40 minutes.
Serve hot.
