Ingredients

1½lbchicken thighsboneless and skinless

1jalapenosliced, optional

½tspsalt

½cupflour

¼cupcornstarch

¼tspground black peppercoarse

oil

¼cupsoy sauce

¼cupsugar

3tbspwater

½tspground ginger

2tbspgarlicminced

Preparation

Cut the chicken into 1-inch pieces and season with salt and pepper.

Slice the jalapeno into ¼ thick slices.

Heat oil on high heat, to 350 degrees F.

In a bowl, mix the salt, flour, cornstarch, and coat the chicken in the mixture.

Add about ¼ of the chicken to the oil at a time, frying in batches.

Once the chicken is fried, add the jalapeños to the oil and fry for 30 seconds.

While the chicken is frying add the rest of the ingredients to a saucepan and bring it to a boil while whisking simultaneously.

Turn off the heat as the mixture boils.

Once all the chicken is fried, toss it with the sauce mixture.
