Ingredients
1small onion,chopped
15½ozblack beans,(1 can) drained
15½ozkidney beans,(1 can) drained
8oztomato sauce,(1 can)
10ozfrozen corn kernels
10oztomatoes w/chilies,(2 cans) diced
4ozgreen chili peppers,chopped
1reduced sodium taco seasoning,(packet) or homemade
1tbspcumin
1tbspchili powder
3chicken breasts,(24 oz) boneless skinless
¼cupfresh cilantro,chopped
Preparation
Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder, and taco seasoning in a slow cooker and mix well.
Nestle the chicken in to completely cover and cook on Low for 8 to 10 hours or on High for 4 to 6 hours.
A half an hour before serving, remove chicken, and shred.
Return chicken to slow cooker and stir in.
Top with fresh cilantro and your favorite toppings!
