Ingredients

2 eggs

⅔ cup vegetable oil

1¼ cups granulated sugar

1 cup zucchini, grated

1 tbsp vanilla extract

2 cups all-purpose flour

¼ tsp salt

½ tsp baking powder

1 tbsp ground cinnamon

¼ tsp ground nutmeg

powdered sugar

Preparation

Beat eggs into a large mixing bowl along with the vegetable oil, sugar, and vanilla. Mix well.

Sift and add in your dry ingredients and stir well and fold in the zucchini.

Pour into the crockpot lined with greased parchment paper.

Bake on High for 3 hours or until done. Serve.
