⅓cupfresh basil leavesjulienned or roughly-chopped

¼cupolive oil

2tbspapple cider vinegaror red wine vinegar

1tbspfresh lemon juice

½tspItalian seasoning

pinchsalt and black pepper

Preparation

Toss the cucumber, quinoa, red onion, feta cheese, and basil leaves together in a bowl until combined. Set aside.

Whisk the olive oil, apple cider vinegar, lemon juice, Italian seasoning, salt and black pepper together in a small bowl until combined.

Drizzle the vinaigrette over the salad, serve, and enjoy!
