Ingredients

1cucumber

1iceberg lettuce head,cut into bite-sized pieces

romaine head,cut into bite-sized pieces

4plum tomatoes,cut into wedges

½chicory head,cut into bite-sized pieces

½cupextra-virgin olive oil,to taste

3tbspbalsamic vinegar,to taste

1tspItalian seasoning

1tsplemon juice

½tspcelery seed

½tspgarlic salt

⅛tspground black pepper

⅛tspground ginger

¼cuppignoli,or pine nuts, optional

¼cupparmesan cheese,freshly grated

Preparation

Run a fork down the length of the cucumber to create thin stripes. Cut the cucumber into thin slices.

Mix cucumber, iceberg lettuce, romaine, tomatoes, and chicory together in a large bowl. Add olive oil and balsamic vinegar; toss to coat.

Season with Italian seasoning, lemon juice, celery seed, garlic salt, pepper, and ginger.

Garnish salad with pignoli and Parmesan cheese.
