Ingredients
4 oz mozzarella cheese, grated
⅓ cup all-purpose flour
⅓ cup water
2 tbsp unsalted butter
1 tsp salt
¼ tsp ground black pepper
¼ tsp cayenne pepper
1 egg, large
5 cups vegetable oil, (up to 8 cups), for frying
¼ cup marinara sauce
Preparation
Add water, butter, and salt into a skillet over medium heat and bring to a boil.
Once the water has boiled and butter has melted, add the flour, then reduce heat to medium. Mix for roughly 3 to 5 minutes until the dough comes together.
Transfer to a mixing bowl and allow to rest for roughly 10 minutes until warm to the touch.
Add both peppers and egg. Whisk until the mixture turns into a sticky dough.
Cover with cling film and set aside for at least an hour to rest in a chilled area.
While waiting, preheat the oil ready for frying. Prepare also a plate lined with paper towels.
Once the dough has rested, add the mozzarella cheese and mix to combine.
Form into roughly 2-ounce portions using either 2 spoons an ice cream scoop, or greased hands.
Deep fry in batches for roughly 3 to 5 minutes until golden brown and tiny pieces of mozzarella cheese poking up the surface.
Drain onto a basket or plate lined with paper towels. Serve while still hot with marinara sauce per serving.
