Ingredients
1½cupsspelt flour
1cuprolled oats
1½tspbaking soda
1tspground cinnamon
2very ripe bananas,mashed
½cupsunflower seed oil
½cupwhite sugar
Preparation
Preheat the oven to 350 degrees F. Grease 12 muffin cups or line with paper muffin liners.
Whisk together the spelt flour, oats, baking soda, and cinnamon in a bowl. Stir together the bananas, oil, and sugar in a separate bowl.
Stir the banana mixture into the spelt mixture just until the dry ingredients are moistened. Divide the mixture evenly into 12 muffin cups.
Bake in the oven for about 18 minutes until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes, then remove to cool completely on a wire rack.
