Ingredients
1⅔cupsall purpose flour
½cupunsweetened cocoa powder
1½tspbaking powder
pinchsalt
¾cupsuperfine sugar
¾cupdark chocolate chips
2large eggs
1large egg white
Preparation
Preheat the oven to 375 degrees F.
Line two baking sheet with parchment paper.
Combine the flour, cocoa powder, baking powder, salt, and sugar in a large bowl.
Add the chocolate chips, then mix.
Gradually add the eggs and egg whites to the mixture, then combine to make a dough. If dough is too dry, add one more egg white.
Divide the dough into two or three loaves.
Place the dough on the lined baking sheets. If the dough is too sticky to form with hands, use a wooden spatula to transfer it onto the baking sheets.
Bake for 20 minutes.
When cool enough to handle, gently cut the loaves on the angle into ½ inch slices with a serrated bread knife works.
Return the biscotti to the baking sheets.
Bake for another 3 to 4 minutes on each side; less time for softer biscotti.
