Ingredients

½cupshortening

½cupbrown sugar,packed

1cupall purpose flour

½tspsalt

½cupquick cooking oats

1cupbrown sugar,packed

1tspvanilla extract

2eggs

2tbspall purpose flour

½cupcoconut,shredded

½tspbaking powder

½cuppecans,chopped

Preparation

Preheat the oven to 350 degrees F.

Cream the shortening with brown sugar. Add the flour, salt, and oats and blend.

Press into the bottom of 1 8×12-inch baking dish.

Bake for 15 minutes.

Beat the eggs well. Then, beat in the brown sugar and the vanilla. Stir in the flour and baking powder, blending well.

Stir in the coconut and pecans. Spread over the top of the baked bottom layer.

Return the dish to the oven and bake for an additional 15 to 20 minutes at 300 degrees F. Let cool.
