Ingredients
8ozwide noodles,(1 package)
1½lbslean ground beef
¾cupsweet onion,chopped
8oztomato sauce,(1 package), no salt added
salt and ground black pepper,to taste
8ozcream cheese,(1 package), room temperature
1cupcottage cheese,small curd
¼cupsour cream
½cupgreen onion,chopped
⅓cupgreen bell pepper,chopped
Preparation
Preheat the oven to 350 degrees F. Grease a 9×13-inch baking dish.
Bring a large pot of lightly salted water to a rolling boil. Boil the noodles for about 5 minutes until cooked through yet firm to the bite, then drain.
Cook the ground beef and onions in a large skillet over medium heat, breaking the meat up into crumbles as it cooks for about 10 minutes until the beef is completely browned. Mix in the tomato sauce, then season with salt and black pepper.
Beat the cream cheese in a bowl until smooth. Stir the cottage cheese, sour cream, green onion, and green pepper into the cream cheese.
Layer ½ of the cooked noodles into the bottom of the prepared baking dish, then top with the cheese mixture, dropping it onto the noodles by spoonfuls and spreading over the noodles.
Cover with the remaining noodles, and spread the meat mixture on top in an even layer.
Bake in the oven for about 40 minutes until the casserole is bubbly.
