Ingredients
1tbspolive oil
1½cupspotatoes,cooked or hash browns
1cupmixed vegetables,such as peppers and mushrooms
8slicesbacon,chopped, or ½ cup diced ham
2green onions,sliced
¼tsp*seasoned salt,(see Recipe Notes for recipe), or to taste
½tspdry mustard
¼tspblack pepper
8eggs
¼cuplight cream
½cupcheddar cheese,shredded
1tbspfresh parsley,or basil
Preparation
Preheat oven to 400 degrees F.
Add olive oil to an 8-inch skillet and cook vegetables for about 3 to 4 minutes until tender-crisp. Stir in potatoes and cook an additional 5 minutes.
In a medium bowl, combine eggs, light cream, dry mustard and seasonings.
Add bacon and green onion. Pour egg mixture over top and sprinkle with cheese and fresh herbs.
Bake for 14 to 16 minutes or until the eggs are set. Broil for 1 to 2 minutes.
Remove from the oven and cool 5 minutes before cutting. Serve warm.
