Ingredients
8small corn or flour tortillas
8large eggs,either scrambled or fried
refried beans
2avocados,peeled, pitted and sliced
salsa of choice,red, green, or pica de gallo
chopped fresh cilantro
cheese
sour cream
diced jalapeños
Preparation
Prepare the refried beans in a large saucepan according to instructions.
Meanwhile, as the beans are cooking, go ahead and scramble or fry the eggs in a non-stick sauté pan.
Once the beans and eggs are ready to go, assemble the tacos. Simply spread a spoonful of refried beans on a tortilla, top with a spoonful of scrambled eggs, then avocado, salsa, and any preferred toppings.
Serve immediately and enjoy!
