Ingredients
2¾cupsall purpose flour,unbleached, plus more for rolling
1tbspsugar
½tspbaking soda
½tspsalt
8tbspunsalted butter
1cupplain yogurt
water,in a spray bottle for misting
dried herbs,or spices or seeds, (such as mustard, fennel, cumin, sesame as desired), chopped
kosher salt
freshly ground black pepper
Preparation
Preheat the oven to 400 degrees F
Place the flour, sugar, baking soda, and salt into a large bowl and mix well.
Add the butter and cut in as for pie crust with a pastry blender or 2 knives until the mixture resembles cornmeal.
Add the yogurt and stir with a fork until the mixture forms a dough.
Break off marble-size pieces of dough and roll out on a lightly floured surface to 7-inch rounds that are less than ⅛-inch thick, even paper-thin.
Place on ungreased baking sheets and mist with water.
Sprinkle with any combination of seasoning, or any single seasoning.
Bake for 3to5 minutes until crisp and golden brown.
Transfer to wire racks to cool.
