Ingredients
1lblean ground beef
14½ozdiced tomatoes,(2 cans)
15ozwhole kernel corn,(1 can) drained
15ozkidney beans,(1 can) drained and rinsed
15ozblack beans,(1 can) drained and rinsed
4ozsliced olives,(1 can)
1McCormick® taco seasoning package
14½ozbeef broth
16ozvelveeta cheese,or 2 cups shredded cheddar cheese, cubed
sour cream
cilantro
avocado,sliced
tomatoes
tortilla strips
Preparation
In a large pot over medium high heat, add the ground beef. Cook and crumble until no longer pink and drain the grease.
Add the diced tomatoes, corn, kidney beans, black beans, olives, taco seasoning packet, and beef broth.
Add in the Velveeta cheese or the shredded cheddar cheese. Stir together and bring to a boil. Reduce heat to medium low and let simmer for 2 to 3 minutes to let the flavors blend.
Serve with desired toppings.
