Ingredients
2cupsclamato,(tomato-clam cocktail)
½cuptomato juice,or vegetable juice
½bell pepper,red
½bell pepper,orange or yellow bell pepper
½poblano pepper,or green bell pepper
½hass avocado,firm-ripe
¼cupcilantro,chopped
1clovegarlic
2tbspfresh lime juice
2tbspcider vinegar
1tbsptabasco sauce
1½tspkosher salt
1tspground cumin
1tspfreshly ground pepper
1lbjumbo lump crabmeat
cucumber,chopped, to taste
Preparation
In a large pitcher or bowl, combine all ingredients except crab and cucumber. Cover and refrigerate until ready to serve.
To serve, place chunks of crabmeat in a small cocktail or juice glasses. Top with tomato mixture and garnish with cucumber.
