Ingredients

1 ½all-purpose flourplus extra for rolling

1tspbaking powder

¼tspsalt

½cupunsalted buttersoftened

½cuplight brown sugarpacked

1egg

1tspvanilla extract

½tspalmond extract

8ozlow-fat cream cheese

3tbspmaple syrup or honey, or 1 cup of powdered sugar

1tspvanilla extract

fine sea saltpinch

fresh strawberriesor blueberries, raspberries, blackberries, or any other fruit of your choice

fresh honeyoptional, for drizzling

Preparation

Heat oven to 350 degrees F.

Grease either a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan with cooking spray.

In a medium bowl, whisk together the flour, baking powder, and salt, then set aside.

In a large mixing bowl, beat the butter and sugar together on medium speed until light and fluffy, about 2 minutes.

Add the egg, vanilla, and almond extract, then beat on medium speed until completely combined, scraping down the sides partway through if needed.

Add in the dry ingredients, and beat on low speed until just combined.

Press the dough evenly into the prepared pan or dish, then use a fork to poke a few holes in the dough.

Bake for 15 to 18 minutes, or until the dough is lightly golden.

Transfer to a wire baking rack to let cool for 20 minutes.

Whisk together the cream cheese, maple syrup, vanilla extra, and fine sea salt until combined.

Spread the frosting out evenly on the baked cookie crust.

Sprinkle with strawberries or other desired fruits then drizzle with a bit of honey if desired.

Slice, serve and enjoy!
