Ingredients
1lbrotini pasta
1cucumberchopped
1cupgrape tomatoeshalved
1red bell pepperchopped
½red onionthinly sliced
4ozFeta cheesecubed
½cupKalamata olivespitted and cut in half
¼cupolive oil
3tbspred wine vinegar
½tbspdried oregano
½tspgarlic powder
¼tspkosher salt
⅛tspground black pepper
2tbspfresh dillfinely chopped
Preparation
In a large pot of boiling water, cook the rotini according to the package instructions.
Drain them, then place in a large bowl.
Add the cucumber, tomatoes, bell pepper, red onion, feta and olives to the bowl.
Combine the olive oil, red wine vinegar, oregano, garlic powder, salt, pepper, and dill in a small bowl.
Whisk to combine.
Pour the dressing the bowl of pasta salad, then toss together carefully.
Serve, and enjoy!
