Ingredients

1red bell pepper,sliced into thin strips

1green bell pepper,sliced into thin strips

1large onion,sliced into thin strips

1large jalapeno pepper,sliced

2½tspfajita seasoning mix,divided

1tspolive oil

12ozlarge shrimp,raw, peeled and deveined

1tbsplime juice

8flour tortillas,(6 inch), fajita-size

Preparation

Preheat an outdoor grill to medium-high heat and lightly oil the grate.

Place the bell pepper strips, onion, and jalapeno slices in a large bowl. Add 2 teaspoons of fajita seasoning and olive oil. Stir until evenly combined.

Place the shrimp in a separate bowl. Add the remaining ½ teaspoon of fajita seasoning and lime juice, then gently stir until evenly combined.

Place the vegetable mixture in a grill basket. Grill for 10 minutes. Stir in shrimp and grill for 5 minutes more. Remove the basket from the grill.

Place the tortillas on the grill and toast for 2 minutes.

Divide the filling between the tortillas, serve, and enjoy!
