Ingredients
30ozchickpeascan, rinsed and drained, or 3 cups cooked chickpeas
⅔cupred pepperschopped, roasted
⅔cupfeta cheesecrumbled
½cupfresh basilchopped
⅓cupolive oil
¼cupred wine vinegar
1tbsphoneyplus 1 tsp
4garlic clovesmedium, pressed or minced
½tspdried oregano
½tspsalt
½tspblack pepperfreshly ground
½tspred pepper flakesadjust to spice preference
Preparation
In a medium serving bowl, combine the chickpeas, red peppers, feta, and basil.
In a small bowl, whisk together the olive oil, vinegar, honey, garlic, oregano, salt, pepper, and red pepper flakes.
Pour the dressing over the chickpeas and stir.
Cover the bowl and place it in the fridge for at least 30 minutes for the best flavor.
