Ingredients

4matzo crackers,fat-free

6tbsptomatoes,crushed

½tspdried oregano

1cupmozzarella,reduced fat, shredded

2medium tomatoes,sliced paper thin

red onion,to taste

12black olives

¼cupfresh basil,for topping

Preparation

Preheat the oven to 375 degrees F. Place a rack on a baking sheet.

Spread 1½ tablespoons of crushed tomatoes on each matzo. Sprinkle with oregano then top with tomatoes and onions.

Top with ¼ cup of cheese on each one, olives and bake in the oven for about 5 to 6 minutes until the cheese melts.

Serve warm, and enjoy!
