Ingredients

1½cupsorzo

15ozgarbanzo beanschickpeas, drained and rinsed

⅓cupred onionfinely chopped

2cupsfresh spinachchopped

1½cupstomatoesdiced

½cupfeta cheesecrumbled

3tbspred wine vinegar

1tbspFresh Lemon Juice

½tspdijon mustard

1tspsugar

⅛tspgarlic powder

⅓cupolive oil

Preparation

Cook orzo for 10 minutes until tender. Cool.

Combine all dressing ingredients in a small bowl and whisk.

Combine orzo with remaining salad ingredients.

Toss with dressing and season with salt and pepper.

Refrigerate at least 1 hour before serving
