2lbscarrots,washed, peeled, and cut if large

2tbspolive oil

1tspkosher salt

¼tspfreshly cracked black pepper,plus more to taste, as needed

parsley,chopped, for garnish, optional

Preparation

Preheat the oven to 425 degrees F, then line a baking sheet pan with parchment paper.

Toss the carrots with oil, salt, and pepper in a bowl.

Pour the carrots on the prepared baking sheet, then arrange them in a single layer.
