2lbscarrots,washed, peeled, and cut if large

Preparation
Preheat the oven to 425 degrees F, then line a baking sheet pan with parchment paper.
Toss the carrots with oil, salt, and pepper in a bowl.
Pour the carrots on the prepared baking sheet, then arrange them in a single layer.
Bake for 18 to 20 minutes or until tender when pierced with a fork.
