Ingredients

1½lbspotatoes,unpeeled, cut into 1-inch chunks

2tbspolive oil

1tspkosher salt

¼tspblack pepper

½cupparmesan cheese,grated

¼tspdried thyme leaves

Preparation

Preheat an oven to 400 degrees F.

Place the potatoes into a mixing bowl, and drizzle with olive oil. Sprinkle with kosher salt, black pepper, Parmesan cheese, and thyme leaves.

Toss to evenly coat, and transfer to a 9×13-inch baking dish.

Bake in the preheated oven for about 1 hour until the potatoes are golden brown on the edges and tender when pierced with a fork.

Serve hot or at room temperature, and enjoy!
