Ingredients
12oztri-color rotini pasta
10ozgrape tomatoes,(1 pint), halved
1½cupsEnglish cucumber,diced
1½cupsbroccoli florets,chopped tiny
1cupyellow bell pepper,chopped
1cupolives,sliced
¾cupbaby carrots,thinly sliced
⅓cupred onion,chopped
½cupparmesan cheese,finely shredded
1⅓cupsItalian salad dressing,bottled, used Kraft
Preparation
Cook the pasta according to package instructions to al dente, but do not season the water with salt. Drain and rinse under cold water.
Pour the pasta into a bowl, add the tomatoes, broccoli, bell pepper, olives, cucumber, carrots, red onion and parmesan.
Pour the salad dressing over, then toss to evenly coat.
Cover and chill for at least 30 minutes. Add a little more dressing, if needed.
Serve chilled, and enjoy!
