Ingredients
2tbspolive oil
1cupwhite onion,chopped
½cupcelery,chopped
½cupcarrots,chopped
½cupred pepper,diced, roasted
3garlic cloves,chopped
3cupschicken broth,or vegetable broth
1cupred lentils
1tsppaprika,smoked
Preparation
Heat the oil in a saucepan over medium-high heat. Add onion, celery, carrots, roasted red pepper, and garlic and saute for about 5 minutes, stirring frequently, until the onion is cooked and translucent.
Add the broth, lentils, and smoked paprika. Reduce heat to medium-low, and simmer for 20 to 30 minutes, or until the lentils are cooked.
Serve warm.
