14ozjars quartered artichoke heartsdrained and roughly chopped

12ozjar roasted red peppersdrained and diced

½cuptoasted pine nuts

1batchzesty red wine vinaigrette

freshly-grated Parmesan cheeseoptional garnish

½cupparmesan cheesegrated

⅓cupextra-virgin olive oil

¼cupred-wine vinegar

1tspItalian seasoningstore-bought or homemade

½tspkosher salt

½tspblack pepperfreshly-cracked

¼tspgarlic powder

Preparation

Add all ingredients together in a large bowl, and toss until evenly combined. Serve immediately, garnished with extra Parmesan cheese if desired.
