Ingredients
1double crust pie,(9-inch)
1tsporange zest
4cupsrhubarb,diced
3cupsfresh strawberries,sliced
1½cupswhite sugar,plus 1 tbsp for decoration
6tbspquick-cooking tapioca
1tbspmilk,for brushing
Preparation
Preheat the oven to 400 degrees F. Line a pie pan with bottom crust.
Mix together the rhubarb, strawberries, orange zest, 1½ cups of sugar, and tapioca. Spoon into the crust.
Roll out the second crust, and place over the filling. Seal the edges. Brush with milk, and sprinkle extra sugar on top.
Bake at 400 degrees F for 10 minutes. Reduce the heat to 350 degrees F, and bake for an additional 35 minutes.
