Ingredients
8ozcream cheese
2cupMexican blend cheese
14ozcreamed corn
8oztomatoes,dived
½cupsour cream
2clovesgarlic
1tspchili powder
1½cupschicken,shredded
salt,to taste
1tspolive oil
sour cream, olives, cilantro, etc.,toppings
Preparation
Coat a 9-inch quiche dish or deep dish pie plate with cooking spray and set aside.
In a processor or blender, mix cream cheese, 1 cup cheese, corn, tomatoes, sour cream, garlic and chili powder until almost smooth. Stir chicken in by hand.
Spoon mixture into greased dish. Top with remaining 1 cup cheese. Drizzle with oil. Bake at 325 degrees F for 45 minutes.
Garnish with desired toppings and serve
