⅓cupgreek yogurt

½tspsalt

¼tspground black pepper

¼tspgarlic powder

¼tsponion powder

¼tspdried oregano

⅛tspcayenne pepper

1cupred bell pepper,finely chopped

1cupfresh spinach,finely chopped

½cupsharp cheddar cheese,shredded

Preparation

Preheat the oven to 375 degrees F. Generously grease a 12-cup muffin tin with cooking spray.

Combine the egg whites, Greek yogurt, salt, black pepper, garlic powder, onion powder, oregano, and cayenne in a bowl.

Whisk until smooth and no lumps remain. Mix in the red bell pepper, spinach, and Cheddar cheese.

Divide the egg mixture between the 12 muffin cups, filling until almost full.

Bake in the oven for 20 to 25 minutes until the egg bites puff up substantially and begin to brown. Allow to cool for 5 minutes; bites will deflate substantially at this time.

Run a knife around the edges and bottoms to loosen and remove from the cups. Allow to cool at room temperature.

Serve, and enjoy!
