Ingredients

14ozcoleslaw,(1 bag)

1cupcarrots,shredded

1bell pepper,(yellow or red), thinly sliced or diced

½cupfresh cilantro,finely-chopped

½cupgreen onions,thinly sliced

⅓cuptoasted almonds,sliced or slivered

toasted sesame seeds

2tbspavocado oil,or olive oil, or any other mild-flavored oil

1tbsplow-sodium soy sauce

1tbspmaple syrup,or honey

1tbsprice vinegar

1tsptoasted sesame oil

½tspground ginger

1clovegarlic,(or ¼ tsp garlic powder), pressed or minced

sea salt and freshly-cracked black pepper

Preparation

Whisk all ingredients together in a bowl (or shake together in a mason jar) until combined.  Taste and add additional sweetener if desired.  Use immediately or refrigerate in a sealed container for up to 3 days.

Combine all ingredients in a large salad bowl, drizzle evenly with the vinaigrette, and toss until evenly combined.  Serve immediately and enjoy!
