Ingredients

2cupscooked farro

1cupcucumberdiced

1cupchickpeascanned, drained then rinsed

½cupred peppersroasted, diced

¼cupred onionfinely chopped

½cupcrumbled feta cheese

½cupkalamata olivessliced

¼cupparsleychopped

6tbspolive oil

1tbsplemon juice

1tbspred wine vinegar

1tspdijon mustard

¼tspgarlic powder

¼tspdried oregano

Salt and pepperto taste

Preparation

Place the farro, cucumbers, chickpeas, roasted peppers, red onion, feta cheese, olives, and parsley in a large bowl.

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic powder, oregano, and salt and pepper.

Pour the dressing over the farro mixture. Toss to coat then serve
