Ingredients

1½cupscorn kernels,fresh, canned or frozen, thawed

1½cupsblack beans,canned, cooked, drained, rinsed

½small red onion,diced

1cuptomato,diced

1avocado,chopped

¼cupcilantro,chopped

2tbspolive oil

1lime,juiced

1garlic clove,minced

1tspsalt

pinchground pepper

pinchcayenne pepper

1small jalapeño pepper,seeded, chopped, optional

Preparation

Add the corn, beans, onion, tomato, avocado, cilantro, olive oil, lime, garlic, salt, ground pepper, cayenne pepper, and jalapeno to a large bowl.

Stir to combine, then taste and add more salt, pepper, or cayenne as needed.

Cover and let sit in the refrigerator for 1 hour or up to 1 day.

Serve with tortilla chips, and enjoy!
