Ingredients

1tbspolive oil

1lbground chicken

1tspground black pepper

½tbsplight soy sauce

½tspsalt

1cuponionchopped

1cupjalapeñoseeded and chopped

2tbspmayonnaise

1tbsplemon juice

1cupRomaine lettuce

1cupgreen onionchopped, for garnish (optional)

lemonsliced, optional

Preparation

In a pan on high heat, cook ground chicken on high until lightly browned. Once cooked, add black pepper, soy sauce and salt.

Continue to stir until the chicken has absorbed juice and become golden-brown. Then add chopped onion and jalapeño.

Let the onions cook slowly until about half cooked. At this point, add mayonnaise and lemon juice into the mixture and mix well.

Garnish with chopped green onions, scoop into lettuce cups, garnish if desired, and serve.
