1tspextra-virgin olive oil

1cupquinoa

1½tbsplemon juice,fresh

1cupchicken broth,reduced-sodium

¼tspsalt

½cupflat-leaf parsley,chopped

1½tbsplemon juice,fresh

Preparation

In a medium saucepan, heat oil over medium heat. Add the quinoa and cook for 3 to 4 minutes, until lightly toasted.

Stir in chicken broth and salt. Bring to a boil; reduce heat to low, cover, and cook for 15 minutes, or until broth is absorbed and quinoa is tender.

Remove from heat and fluff with a fork. Let cool slightly and stir in parsley and lemon juice. Adjust seasoning to taste.

Serve warm or at room temperature alongside fish or meat, and enjoy!
