Ingredients
1lbcarrots,carrots
2tbspchives,or chopped green onion, finely snipped
2tbspfresh parsley,finely chopped
1½cupschickpeas,cooked, optional
2tbspextra-virgin olive oil
2tbsplemon juice
2tsphoney
1tspdijon mustard
½tspground cumin
¼tspfine sea salt
Preparation
Grate the carrots on the large holes of a box grater.*
Place the carrots in a medium serving bowl. Add the chives, parsley, and optional chickpeas to the bowl.
Whisk all of the ingredients together in a small bowl until completely blended.
Pour the dressing over the carrot mixture and stir until the mixture is evenly coated in the dressing.
Allow the salad to marinate for 20 minutes.
Toss again before serving. Enjoy!
